Abstract: Long-chain fatty acid esters of starch have some special properties,such as thermal plasticity,hydrophobicity,emulsifiability and biodegradability. The preparation methods including fatty acid anhydride method,fatty acid chloride method,transesterification method,etc,are reviewed,and their advantages and disadvantages are analyzed. Additionally their application fields and prospects are introduced.

长链脂肪酸淀粉酯是一类具有特殊的热塑性、疏水性、乳化性和可生物降解性的变性淀粉,在食品、纺织、化妆品、医药等行业有着广泛的应用。本文系统地介绍了长链脂肪酸淀粉酯的性质、合成方法和应用领域;分析了各种制备方法的特点,并指出了今后研究方向和发展前景。
