Abstract: Research progress of the preparation of microencapsulated vitamin C was reviewed. The coating materials and microencapsulation methods of vitamin C were discussed. Applications of microencapsulated vitamin C in foods，pharmaceuticals and feeds were also introduced.

摘要： 综述了国内外维生素C微胶囊制备技术的研究进展；讨论了制备维生素C微胶囊所用的包埋材料和包埋方法；介绍了维生素C微胶囊在食品、医药、饲料等方面的应用。
